Innovation

One innovation that is related to food industry is Mandoline. The first illustration of Mandoline was in a Culinary book that was publised in 1570 by Bartolome Scappi. It was shown as a small board which has a cutting blade to cut vegetables into thin sticks. It is named after the musical instrument mandolin as the Chef were known to play their instrument at the same manner being a Chef and Musician. This is originated in Italy, and they made stainless steel with guard folding stand.

In cooking, it is important to have the same sizes of the ingredients to have the same time of the doneness of cooking. By using this, it will help saving the time to slice the foods properly and to have a uniform thickness. Also, this utensil is very useful in kitchen to make different cuts in easier way. There are different blades that can be attached to the mandoline to create Julienne cuts, wavy cuts, and crinkle cuts.

Diets and Dietary Restrictions

There are different ways of having a diet as it follows:

Atkins Diet -  this controls the level of insulin that we consume in our body.
The Zone Diet - It is a balance of Carbohydrates (40%), Fats (30%), and Protein (30%) that we take on each meal.
Vegetarian Diet - The majority of vegetatrians are the lacto-ovo vegetarians. They only eat eggs, dairy and honey from the animals and never be the animals to eat.
Vegan Diet - They never eat animal-based foods even dairy, honey and eggs.
Paleo Diet - This is more on vegetables, fruits, meats and fish. And never eat processed foods.

Paleo Diet

There are lots of ways on how to make a dietary concept. And I chose to do the Paleo diet. This diet can balance my meal as well as I can still enjoy eating meat but it excludes the dairy and grain products as well as the processed foods. The chart below shows what I took for the whole week with the help of the Paleo diet.



This whole week of experience has a very good impact to me. This helps me to keep myself more healthy and fit. Although I had meat almost everyday, it helps me balance what am I having.

To maintain a heathier diet, I should eat more vegetables and fruits. Increase the amount of eating fish instead of meat. I watched my daily meals and I also did some exercises to get more fit and healthy. I should eat fresh foods as possible and avoid raw vegetables. I would definitely avoid eating outside and I should learn how to make my own food everyday for me to know what am I eating.

I created a recipe which helps me out on my dietary concept. This is what I called Potato and Tuna Patty.
Recipe:
- Potatoes (boiled, peeled, mashed)
- Tuna Flakes
- Celery
- Carrots
- Corn Kernels
- Egg yolks
- Breadcrumbs

Method:
- Into a stainless steel bowl, add the mashed potatoes, and all the ingredients.
- Season with salt and pepper.
- Divide it to portions according to the size you prefer.
- Fry into olive oil and serve.

Hug A Farmer

        My family owned a farm back home in Philippines. We own a rice field which we supply to different cities and provinces. We also have vegetable field which we forward to the market, and animals which we used to grow them and sell afterwards.

         I talked to Mr. and Mrs. Javier - parents of mine, about how they did start farming and it started from their parents. My grandfather was a helper before in a rice mill and he dreamed to have his own one day. He saved his salary and he bought a land and use it for their living. He started on a small business which is having a small garden with different kinds of vegetables and fruits. Until one day, he didn’t notice that he is managing his own farm already. He also bought number of lands and those was filled with vegetables, fruits, rice grains and some animals.


 




        My grandparents have their focus in our rice field. On the month of June and December, they starting to plant those grains and they harvest it every April and October. This happens twice a year. 

        When I am on my vacation in my grandparents home, I always wanted to experience what they do for a living. I knew that all of it were not organic because if it is, those vegetables and fruit will not be grown beautifully because of the hot weather in our country.
That's ME :)
        It's just sad to hear from my parents that it's not always a good day for them farmers. Especially when  there is a typhoon. There's nothing they can do but to watch the farm while it is destroying by the storm.

        In my experience, it is not easy to farm especially when the weather is not on your side. Since I knew about farming, I knew that even if it is just a seed for other people, it may be a treasure to a farmer.

PURCHASING MEAT AND GAME


When purchasing meat, there are different kinds of cuts of it wherein there is an assigned method on cooking it. For the Primal Cut, The Ribs and Loin can be cook in a dry heat. Meanwhile, The Plate, Flank, Shank, Brisket and Chuck could be cook in a Moist heat. The Round could be dry and/or moist heat. the There are lots of cooking method in just one animal. 

I chose to discuss about the Pork. It is the most popular meat in Southeast Asia which is highly prized for an Asian Cuisines. Preserved pork may turn into sausages, ham, bacon and many more. Also, pork is the most use meat on Charcuterie.

Pork Ribs can be defined as a ribcage of a domestic pig which their bones and meat can be served together. It is usable into different cooking methods. It can be smoked, grilled, or baked. Baby back ribs can be found on the top of the ribcage between the spare ribs and the spine. Sometimes, baby back ribs can be meatier and shorter than the spare ribs.

This back ribs may return the investment that you put in because of it’s meatier and juicer after cooking it. My cooking method for this is to bake. Here’s my recipe for the Back Ribs.



1 rack of Back Ribs
3 tbsp Brown Sugar
1/2 cup Honey
1/2 pc Lemon Juice
1/2 cup Teriyaki Sauce
1/4 cup Coriander Leaves
To taste Salt and Pepper
To finish Ketchup

I a stainless steel bowl, mix all together but hold the ketchup.
Rub the ribs into it and leave it for 30 minutes.
Bake the ribs uncovered for an hour and 30 minutes or until the ribs are tender.
Brush the ribs using the ketchup for finishing.
